Our Executive Chef Simon Hartnett’s favourite recipe is actually his great-great-grandmother’s. Ever since Simon started to work as a chef, he has been baking her soda bread recipe.
“I’ve been eating this since I was a kid – it makes me feel so nostalgic,” he explained.
Ingredients
Plain flour 450g
Bicarbonate of soda 1.5 tsp
Salt 1.5 tsp
Sugar 2 tsp
Butter 60g
Buttermilk 280 ml
Mix dry ingredients together. Rub in butter. Add butter milk.
Knead just enough to bring the dough together. Shape & cut a cross deep into it.
Place onto a hot baking tray and bake at 180c for 25 mins. To check, knock the bottom of the bread to check it sounds hollow, if not cook for longer.
